Overview
Fresh snakehead fish (northern snakehead / "money fish") center-cut fillets - boneless, skinless, and un-marinated (no slurry coating). The slices are pristine white and semi-translucent with clearly visible grain patterns and uniform thickness. Snakehead flesh is firm, springy, and virtually bone-free, with exceptionally high protein content and minimal fat - making it an ideal lean protein choice for fitness enthusiasts and post-surgery recovery diets. Cooking & Application
Sour Soup Fish: since un-marinated, coat slices in an egg-white-starch slurry yourself, cook in pickled cabbage broth, finish with blazing chili oil. Poached Fish (Shuizhu): cook in spicy broth until done, remove, top with sizzling Sichuan peppercorn-chili oil. Velvet Slices: dip in beaten egg, quick-fry in hot oil until opaque, remove, toss in thickened sauce. Tomato Fish Soup: saute tomatoes until saucy, bring to a boil, slide in slices 1 min.
Storage
Freeze at -18°C for up to 12 months. Do not refreeze after thawing. For best results, thaw in the refrigerator (0-4°C) for 6-8 hours when the flesh is at its prime.
